Instructions

  • Preheat the oven to 200°F.
  • In a large skillet over medium heat, cook bacon until crispy, about 5 minutes.
  • Transfer to a plate lined with paper towels.
  • In a large mixing bowl, combine the flour, baking powder, and salt.
  • Whisk together the milk, vegetable oil, and egg yolk in a separate bowl.
  • Stir the milk mixture into the flour mixture until just combined.
  • Beat the egg white in a small bowl until stiff peaks form.
  • Fold the egg white into the batter gently.
  • Coat a waffle iron with nonstick cooking spray and heat it up.
  • Scoop the batter onto the waffle iron and cook for 5 minutes, or until golden brown and crisp.
  • Place the waffles on a baking sheet and keep them warm in the oven.
  • Return the skillet to medium heat after cleaning it.
  • Crack the eggs into the skillet and cook for 2-3 minutes, or until the whites are set but the yolks are still runny.
  • Serve the waffles with the fried eggs and bacon on top.
